Daniel Humm is a Swiss-born chef and entrepreneur known for his innovative approach to fine dining and commitment to sustainability. Humm is the Chef and Owner of Make It Nice, a New York-based hospitality group behind Eleven Madison Park and Eleven Madison Home.

In 2021, Humm made headlines worldwide when he announced that he would be making Eleven Madison Park entirely plant-based. Humm's decision was motivated by a desire to take a more sustainable and ethical approach to fine dining. By shifting to a plant-based menu, Humm aimed to reduce the restaurant's carbon footprint and promote a more compassionate approach to food. Though the transition was challenging and faced skepticism, in 2022, Eleven Madison Park became the first plant-based and vegan-only restaurant in history to be awarded three Michelin stars.

Humm's impact extends far beyond the kitchen. He is a passionate advocate for reducing food waste and ending hunger and has used his platform to support a number of charitable initiatives. As a co-founder of Rethink Food, he is leading the charge to repurpose excess food and create nutritious meals for those in need. He has also been a longtime supporter of No Kid Hungry, a campaign to end childhood hunger in America, and has partnered with City Harvest to donate excess food from his restaurant to those in need.

More About Daniel Humm

Humm was exposed to food at a very young age and began working in kitchens at the age of 14. He began his career as an apprentice at some of the finest Swiss hotels and restaurants before earning his first Michelin star at the age of 24.

In 2003, Daniel moved to the United States to become the Executive Chef at Campton Place in San Francisco, where he received four stars from the San Francisco Chronicle. Three years later, he moved to New York to become the Executive Chef at Eleven Madison Park.

Over the course of Daniel's tenure, he and Eleven Madison Park have received numerous accolades, including four stars from The New York Times, seven James Beard Foundation Awards (including Outstanding Chef and Outstanding Restaurant in America), first awarded three Michelin Stars in 2011, and reaching the #1 spot on the World's 50 Best Restaurants list in 2017.

He is the author of Eleven Madison Park: The Cookbook, I Love New York: Ingredients and Recipes, The NoMad Cookbook and Eleven Madison Park: The Next Chapter.
